Spicy Baked Apple Crumb

Summary: Reds Hots make this dish spicy, sweet and divine!

Ingredients

  • 6 red apples
  • 1/2 cup packed brown sugar
  • 1/3 cup cinnamon red hot candies
  • 1/2 teaspoon ground cinnamon
  • For Crumb Topping

  • 2/3 cup Original Bisquick mix
  • 2/3 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 4 tablespoons butter (firm)

Instructions

  1. Preheat oven to 350 degreesTo Prepare Apples
  2. Lightly butter an 8×8 inch square pan.
  3. Peel, slice and core the apples,
  4. In a small bowl, mix together brown sugar, cinnamon red hot candies and cinnamon.
  5. Fold sliced apples into mixture
  6. Arrange in the baking dish.
  7. To Prepare Crumb Topping

  8. Mix Bisquick, brown sugar, cinnamon and butter in small bowl until crumbly.
  9. Use a knife and fork to cut the mixture into crumbs.
  10. Arrange apple mixture in baking dish.
  11. Cover the top of the apples with crumb mixture.
  12. Bake uncovered in the preheated oven 30 to 35 minutes, or until apples are tender.

Quick Notes

Top with Rediwhip, cool whip or vanilla ice cream.

Variations

To make this dish appropriate for vegans and vegetarians omit the crumb topping or substitute with pre-packaged vegan coffee cake mix.

Basic Macaroni Pasta Salad

Summary: This is a basic picnic style macaroni pasta salad.

Ingredients

  • 1 Package Pasta Salad Noodles
  • 1/2 cup Real Mayonaise
  • 1/2 Cup Miracle Whip
  • 1 Tablespoon Mustard
  • 1 Cup Chopped Celery
  • 2 Hard Boiled Eggs, chopped
  • 1 small jar Pimento
  • 2 small cans sliced black olives
  • 1/2 cup chopped white onion

Instructions

  1. Boil pasta noodles as directed on package
  2. Mix remaining ingredients together in a bowl.
  3. Add pasta noodles to mixture and stir well.
  4. Chill for at least 30 minutes before serving.

Twice Baked Potatoes

Summary: These twice baked potatoes make a great party appetizer and are vegan and vegetarian friendly.

Ingredients

  • 6 Potatoes
  • 1/2 cup butter
  • 1/2 cup
  • milk
  • Salt
  • Baco Bits
  • Shredded Cheddar Cheese
  • Vegan and Vegetarians may substitute Soy Milk for milk and Vege Shreds for Cheddar Cheese.

Instructions

  1. Bake potatoes in a 400 degree oven for 45 minutes or until tender.
  2. Split potatoes down the center lengthwise.
  3. Use a spoon and scoop the meat out of the potato, put scoops into a mixing bowl, so that you are left with a potato shell.
  4. Add butter, milk and salt to the potato you scooped out.
  5. Use a handmixer to beat the potatoes into mashed potatoes.
  6. Spoon mashed potatoes back into potato shell.
  7. Top with shredded cheddar cheese and Baco Bits.
  8. Bake in 400 degree oven until cheese is melted.

Hot Spicy Chicken Wings

Summary: These are hot, juicy and just plain amazing chicken wings

Ingredients

  • 1 teaspoon salt
  • 2 pounds chicken wings
  • 2 tablespoons butter
  • 1 garlic clove finely minced
  • 2 tablespoons Sriracha
  • 1 Tablespoon Crushed Red Pepper Flakes
  • 1 Cup Barbecue Sauce

Instructions

  1. Fry wings in hot oil until they are browned and crispy. (usually about 10 or 15 minutes)
  2. Melt butter in a saucepan
  3. Mix melted butter, barbecue sauce, minced garlic, crushed pepper flakes, salt and Sriracha. Whisk well to combine.
  4. Pour into a large zip lock baggie.
  5. Toss chicken wings in the sauce in the bag.
  6. Serve with Blue Cheese or Ranch Dressing.

Smoked Crab Legs

Summary: A simple way to prepare crab legs without stinking up your kitchen.

Ingredients

  • 1 cup butter or margarine, melted
  • 1 Tablespoon Garlic Powder
  • Pinch salt
  • 5 pounds crab legs
  • Apple Wood Chips

Instructions

  1. Soak wood chunks in water to cover at least 2 hours before cooking time.
  2. Light a fire in the smoker and let it burn for about 20 minutes or so until you get some nice coals.
  3. Drain wood chips, and place on coals. Place water pan in smoker; add water to fill line.
  4. Stir together butter, garlic and salt.
  5. Brush crab legs with half of the butter mix; set aside remaining butter.
  6. Arrange crab legs on the smoker and cover with lid.
  7. Smoke crab legs for about 20 minutes.
  8. Use remainder of butter mixture to dip in

1  cup  butter or margarine, melted

5  pounds  frozen king crab legs, thawed

4  frozen lobster tails, thawed (about 2 pounds)

Preparation

Soak wood chunks in water to cover at least 30 minutes.

Prepare charcoal fire in smoker; let burn 15 to 20 minutes. Drain chips, and place on coals. Place water pan in smoker; add water to fill line.

Stir together butter and next 4 ingredients. Divide lemon-butter mixture in half. Crack crab legs, and split lobster tails. Brush lobster and crab with half of mixture; set aside remaining mixture.

Coat rack with cooking spray; place in smoker. Arrange crab legs and lobster tails on rack; cover with grill lid. Smoke crab about 20 minutes and lobster about 45 minutes to 1 hour or until flesh is white and firm.

Seasoned Hamburgers

Summary: Spicy, zesty, meaty burgers that are sure to be a crowd pleaser.

Ingredients

  • 1 pound ground Round or Chuck
  • 1/2 cup Pappy’s Seasoning
  • 2 Tablespoons Crushed Red Pepper Flakes
  • 1 Tablespoon Worcestershire Sauce
  • 3 Tablespoons Barbecue Sauce
  • Sliced Smoked Bacon Cheddar Cheese

Instructions

  1. Mix all the ingredients together in a bowl.
  2. Make patties to the size of your liking
  3. Grill burgers.
  4. Place slices of cheese on hamburgers for the last 5 minutes of grilling time.

Quick Notes

Top burger with bacon, lettuce, pickle and onion for optimum flavor.

Spicy Chicken Wonton Tacos

Recipe: Spicy Chicken Wonton Tacos

Summary: A tasty alternative to mexican beef tacos.  This recipe came about because I fell in love with Applebee’s Spicy Chicken Wonton Tacos but didn’t want to spend $8.99 for 3 itty bitty tacos.  This recipe tastes just like Applebee’s and makes a lot more than 3.

Ingredients

  • 6-8 Skinless, Boneless Chicken Breasts, Grilled
  • 1 Tablespoon Stir Fry Oil
  • 1 Package of Cole Slaw Mix
  • 1/4 cup diced Red Onion
  • 1 4 oz can diced jalapeños
  • 1 Tablespoon Crushed Red Pepper Flakes
  • Asian Vinaigrette Dressing
  • 1 package square wonton wrappers
  • 1 cup vegetable oil or extra virgin olive oil
  • 1/4 cup Chopped Cilantro
  • Limes

Instructions

  1. In a bowl mix together cole slaw mix (but do not use the cole slaw dressing that comes with it), cilantro and dice red onion.
  2. Strain can of diced jalepenos making sure to eliminate as much of the juice as possible.
  3. Add jalepenos to cole slaw mix.
  4. Pour Asian Vinaigrette into cole slaw mix, you won’t need much. Use an amount that makes the cole slaw taste the way you want it. I use about 1/4 of a cup or less.
  5. Stir cole slaw mixture together until all ingredients are well combined and refrigerate for a minimum of one hour.
  6. Grill Chicken breasts and cut into small cubes.
  7. In a preheated skillet warm up stir fry oil.
  8. When oil is hot add chicken and crushed red pepper flakes.
  9. Fry for about 2 minutes or so until chicken is hot and coated in stir fry oil.
  10. Remove chicken from skillet and add 1 cup of vegetable oil to the pan.
  11. Place a “strip” of cubed and fried chicken in the center of a wonton wrapper and fold the wrapper so that it resembles a taco.
  12. Fry wonton wrapper with chicken inside for about 30 seconds or so until wonton wrapper is golden brown and crispy.
  13. Top each taco with cole slaw mix and a sprinkle of chopped cilantro.
  14. Give everyone a lime wedge to squeeze over their tacos.

Quick Notes

Everyone has their own Asian Vinaigrette that they like. For this recipe I use Tamari Sesame Gluten Free Asian Dressing.

Cooking time (duration): 30 minutes to an hour depending on your grilling skills.

Frito Lay like Layered Bean Dip Recipe

Frito Lay makes awesome bean dip but my recipe is even better because on top of the  beans is more flavorful goodness than just beans.  My Frito Lay like beans are creamy, zesty and can be made for vegans and vegetarians alike.

The secret to making bean dip creamy is in the milk.  Some have been known to add a little melted lard and that’s okay but milk adds a touch of sweetness and helps the beans stay creamy so chips don’t break during dipping.

Recipe: Frito Lay like Layered Bean Dip

Ingredients

  • 1 30 oz can of refried beans (vegans and vegetarians will want to boil their own pinto beans)
  • 1/8 cup milk
  • 1 Tsp ground cumin
  • 1/2 Tsp ground cayene pepper
  • 1/2 Tsp crushed red pepper flakes
  • 1/2 Tsp garlic powder
  • 1/4 Tsp onion powder
  • 1/2 Tsp sugar
  • Toppings

  • Sour Cream
  • Shredded cheddar cheese
  • Diced tomatoes
  • Diced white and purple Onions (half and half)
  • Chopped green onions
  • Sliced black olives
  • Sliced Jalepenos (optional)
  • ***Vegans and Vegetarians can substitute sour cream with Tofutti sour cream,  cheddar cheese with Teese cheese or Cheddareese and milk with soy milk .

Instructions

  1. Mix all bean dip ingredients together in a bowl until smooth and creamy.
    If you are making your own pinto beans then you’ll need to mash them before adding the other ingredients.
  2. Spread bean dip in a pie pan or container of choice.
  3. Spread sour cream on top of bean dip so that the beans are completely covered.
  4. Top with shredded cheddar cheese.
  5. Lastly, add onions, tomatoes and black olives.
  6. Only add Jalepeno’s if you like it HOT.
  7. Dip with Frito Lay’s Corn Chips.

Sweet and Spicy Pumpkin Seed Trail Mix Recipe

Summary: Sweet and Spicy Pumpkin Seed Trail Mix is the perfect healthy snack.  Pumpkin Seed trail mix is high in fiber, bold in flavor and great for hiking and backpacking.

Ingredients

  • 1 Cup Pumpkin seeds
  • 1 Cup Walnuts
  • 1 Cup Almonds
  • 1 Cup Pecans
  • 1 Cup Dried papaya (coarsely chopped)
  • 1 Cup Dried pineapple(coarsely chopped)
  • 1 Cup Dried cranberries
  • 2  Cup Honey
  • 1/8 Cup Orange juice
  • 2  Tsp Cayenne pepper
  • 1 Tbsp Cinnamon
  • Salt to taste

Instructions

  1. In a small bowl mix together honey, orange juice, cayenne pepper and cinnamon.
  2. Set aside.
  3. Combine walnuts, almonds, pumpkin seeds and pecans together in a bowl.
  4. Pour honey mixture over nut mixture and stir until ingredients are well coated.
  5. Spread flat on a cookie sheet.
  6. Bake at 350 for 10 minutes.
  7. Allow baked nut mixture to cool to room temperature.
  8. Combine nut mixture, dried papaya, pineapple and cranberries together.
  9. Sprinkle as much or as little salt on trail mix as desired.
  10. Store in a cool dry place.

Spicy Pumpkin Seed Recipe

Summary: Spicy, zesty, kick ass – that’s what you’ll be saying when you taste these babies.  Serve with sour cream and you won’t be able to stop eating them.

Ingredients

  • 1 Cup Pumpkin Seeds
  • 1 Tbsp Olive oil
  • 1 tsp Crushed red pepper flakes
  • A Dash Garlic salt
  • A Dash Onion powder
  • A Dash Paprika

Instructions

  1. Rinse 1 cup of pumpkin seeds in cool water. Remove pumpkin pulp with your fingers.
  2. Spreads seeds out on a paper towel and allow to dry over night.
  3. Toss dried pumpkin seeds, crushed red pepper flakes, garlic salt and onion powder in oil until well coated. The best way is to dump it all in a zip lock baggie and shake until coated.
  4. Spread out flat on a cookie sheet and sprinkle with paprika.
  5. Bake in a 350 oven for 5 minutes.

Organic Buckwheat Pancakes

Summary: Making organic buckwheat pancakes may sound easy but I never would have imagined there’s VEGAN buckwheat pancakes. These are as simple to make as regular old Bisquick pancakes.

Ingredients

  • 2/3 cup Arrowhead Mills Buckwheat Pancake Mix Egg substitute (it comes in powder form)
  • 2 tsp canola oil
  • 3/4 cup soymilk
  • Optional – Sunspire Organic Chocolate Chips

Instructions

  1. Mix all the ingredients together.
  2. If you are using chocolate chips do not put them into the batter.
  3. Spoon batter into a hot skillet.
  4. Flip pancakes when they are golden brown.
  5. After you flip your pancakes once, sprinkle with chocolate chips. This will help them from completely melting into the pancakes.

Note * These directions can be found on the package of Arrowhead Mills Buckwheat Pancake Mix.

Optional Topping – top with fresh raspberries, blueberries, organic applebutter or syrup.
